VEGAN BULLETPROOF COFFEE with adaptogenic mushrooms

Bulletproof coffee is essentially coffee with butter and MCT oil. So I veganized the trendy bulletproof coffee (thus healthified it) and added some medicinal mushrooms for an abundance of health benefits.

For as long as I can remember, I’ve loved coffee. But recently, as I’ve started to be more aware of my body and how it reacts to certain things. I realized coffee was consistently giving me headaches and causing unnecessary anxiety.

So I found out about adaptogenic mushrooms and decided to give them a try. Let me tell you: they have changed the game with my coffee. These magical mushrooms have allowed me to enjoy coffee without the jitters, headaches, and anxiety. There’s many different kinds of adaptogenic mushrooms with a wide array of medicinal properties (reishi, cordyceps, lion’s mane, etc). The main jyst is that adaptogenic mushrooms have been used for centuries in Ayurvedic medicine. They help boost brain function, balance energy, uplift mood, and improve immune system function. The main component in bulletproof coffee is MCT oil (Medium Chain Triglycerides). Coconut oil contains MCT’s and gives you essentially the same benefits as straight up MCT oil. So aside from giving your coffee a yummy, rich coconut-y flavour, coconut oil speeds up your metabolism and boosts the immune system. It also helps to slow absorption, so that you don’t get jitter-y from the caffeine. Again this is overly simplified information so I don’t get all scientific on you. Lastly, I love adding a ton of cinnamon to my bulletproof coffee. Not only does taste yummy and spicy, but you get the additional health benefits. Cinnamon is loaded with antioxidants, has anti-inflammatory properties, and is anti-bacterial. You can purchase organic cinnamon here.

VEGAN BULLETPROOF COFFEE RECIPE:

(1 SERVING)

16 OZ. STRONG BREWED COFFEE

1 TABLESPOON ORGANIC COCONUT OIL

1 TSP ADAPTOGENIC MUSHROOM BLEND

CINNAMON TO TASTE

SPLASH OF COCONUT MILK (OR ANY NON-DAIRY MILK)

(OPTIONAL) SWEETENER OF CHOICE - MAPLE SYRUP, COCONUT SUGAR, AGAVE

DIRECTIONS:

BREW COFFEE, POUR INTO BLENDER. ADD ALL INGREDIENTS AND BLEND FOR 20 SECONDS OR UNTIL FROTHY. POUR INTO A CUTE MUG AND ENJOY!
