Since becoming vegan, pancakes have been a true challenge for me. I used to love pancakes when going out for breakfast. I’ve always had a sweet tooth. I started making my own from scratch and they never turned out quite right. They were always too dense, or didn’t hold together, or just tasted terrible. Let me tell you about this AMAZING brand started by my friend, Bella. Coconut Whisk is a baking company based in Minnesota that makes vegan, gluten free, nut free, allergen friendly mixes! The pancakes are truly the best I’ve ever had. They are light and fluffy and have the perfect amount of sweetness. They are also SO simple to make. You just pour the contents of the packet into a bowl and add almond milk and vanilla extract. I topped mine with fresh fruit and real maple syrup.
