Since I became plant-based three years ago, my taste buds have changed and evolved like crazy. I never used to crave fresh fruits and veggies, especially spinach or kale. Now I truly crave green juices and all things raw. While I’m not a raw vegan (I love pasta, pizza and tacos too much lol), I always feel amazing and energized when I get my nutrients from raw fruits and vegetables. Juicing is one of the the best ways to increase your intake of raw nutrients.

I’ve had people ask me what the point is of juicing? Isn’t it a waste to use so many fruits and vegetables just to make a serving of juice?

Drinking fresh, organic juice is amazingly beneficial to your health because it floods your body with concentrated, instantly absorbable nutrients. Imagine trying to eat an apple, a whole cucumber, 8 stalks of celery, half of a lemon, and an entire bunch kale. It’d be a little difficult. But when you drink fresh juice, you are getting all those nutrients at once and it surges your body with vitamins and phytonutrients which boost your energy, detox your body, and promote glowing skin. Drinking juice is naturally healing to your body because gives your digestive system a break from breaking down food and allows your system to focus on repairing your cells (hence glowing skin as a result).

Sugar is a concern for people when they think about juice. First of all, it’s naturally occurring sugar, nothing added or artificial. Secondly, these juice recipes are made up of mainly vegetables, and one fruit as a sweetener. So chill. There are worse things you could be putting in your body—refined sugar, meat, dairy, eggs, processed food to name a few— Okay let’s get to the recipes!

Green glow

There are endless benefits to drinking your greens. This green juice is extremely hydrating and will work to rid your body of toxins. It also is rich in antioxidants which repair your cells and has the power to literally undo already existing cell damage. This juice is also rich in amino acids, which aids in weight loss.

1 Apple

6 stalks Celery

½ Cucumber

Large handful spinach/ kale

½ Lemon

2 inch piece fresh ginger

Orange sunshine

1-2 orange

6 carrots

Turn Up The Beet Juice

Beets are rich in nitrates, which boost blood flow, lower blood pressure and increase stamina. Beet juice also is powerful in detoxifying the liver, kidneys, and bladder. Beet juice is a great source of potassium and iron, which boost oxygen and hemoglobin levels in your blood. It is very beneficial for women to drink beet juice during menstruation because it increases circulation and keeps your iron levels from being depleted.

1 large beet

1 apple

5 carrots

2 inch piece fresh ginger

½ lemon

A Note About Organic Produce

When I juice, I buy all organic produce! Leafy greens, celery, carrots, and apples are part of the dirty dozen, which means they are heavy-laden with pesticides if you do not buy organic. You deserve the best for your precious body. So please please spend a few extra dollars and choose organic!

Practical juicing tips:

  • Wash everything thoroughly before juicing!

  • It’s not necessary to peel carrots, cucumbers, fresh ginger or apples. The only thing I peel when juicing is oranges. If your produce is organic, there’s no reason to take the peel off. I even throw in the entire lemon as is.

  • Always cut out apple seeds before juicing! Apple seeds contain toxic chemicals like arsenic. Obviously eating a couple seeds isn’t going to kill you. But I take the precaution because I don’t need that in my body.

  • Fresh, homemade juice loses its nutrients quickly. I would suggest drinking it within 30 minutes. Otherwise store it in a tightly sealed container in the fridge for up to 3 days. It will lose some of the nutrients but it’s still beneficial.

Please let me know if you have any other questions regarding juice! I’d love to hear from you!
