SPIRULINA MERMAID BOWL

IMG-2380.jpg

I could go on and on about spirulina and how amazing it is for you but I’ll keep it concise so this doesn’t turn into an essay. Spirulina is a blue-green algae that is rich in vitamins, minerals, protein, chlorophyll, and antioxidants that help repair cell damage. It has 2300% more iron than spinach and 300% more protein than tofu. It also gives you a boost of sustainable energy and reduces symptoms of depression. Spirulina has even has been known to prevent the risk of cancer. So what I’m saying is you should be incorporating this superfood into your diet to become a healthy, glowing mermaid (lol).

For real though, this spirulina smoothie bowl makes you feel like a mermaid. From the vibey ocean colour, to the tropical flavors, and the glowy skin you’ll have a result of consuming it. It is full of vitamins, fiber, and antioxidants. It’s also vibrant and life-giving, as opposed to say, starting your day with cholesterol-packed eggs and bacon. Fruit is truly a remarkable thing, because think about it! In order to grow, it needs sunshine and water. When you eat fruit, you’re consuming the sun’s energy. Fruit floods your body with phytonutrients, makes your skin glow, hydrates your body, repairs your cells, and heals free-radical damage.

In case you’re wondering where in the world you can buy spirulina… I buy mine from Thrive Market because the price and quality is unbeatable. Purchase through this link and you’ll get 25% off your first order and free shipping!

The trick to making delicious smoothie bowls is to use frozen fruit. When you freeze your bananas, cut them into smaller pieces so they blend easier. The other secret is to top it with bomb-ass (do people still say that) toppings. Decorating smoothie bowls has become my creative outlet. But maybe I have too much time on my hands. Either way, I hope you enjoy.

VEGAN BULLETPROOF COFFEE with adaptogenic mushrooms

IMG-0152.jpg

Bulletproof coffee is essentially coffee with butter and MCT oil. So I veganized the trendy bulletproof coffee (thus healthified it) and added some medicinal mushrooms for an abundance of health benefits.

For as long as I can remember, I’ve loved coffee. But recently, as I’ve started to be more aware of my body and how it reacts to certain things. I realized coffee was consistently giving me headaches and causing unnecessary anxiety.

So I found out about adaptogenic mushrooms and decided to give them a try. Let me tell you: they have changed the game with my coffee. These magical mushrooms have allowed me to enjoy coffee without the jitters, headaches, and anxiety. There’s many different kinds of adaptogenic mushrooms with a wide array of medicinal properties (reishi, cordyceps, lion’s mane, etc). The main jyst is that adaptogenic mushrooms have been used for centuries in Ayurvedic medicine. They help boost brain function, balance energy, uplift mood, and improve immune system function. I could spend all day telling you about the specific health benefits of each mushroom, but I’ll spare you the droning research paper. I’ll just give you an example of one of the adaptogenic mushrooms you can find in this recipe. Aside from being fun to say, Ashwagandha is known to reduce stress, decrease cortisol levels, and reduce symptoms of depression. Ashwagandha is great for brain function, focus, and memory. AND it even has anti-cancer properties. You can surf the world wide web to find out more about adaptogenic mushrooms. You can purchase these magical ‘shrooms here. Thrive Market is one of the best places I’ve found for all things health, including the best brand (in my opinion) for adaptogens- Four Sigmatic. Click this link for 25% off your first order, plus free shipping!

The main component in bulletproof coffee is MCT oil (Medium Chain Triglycerides). Coconut oil contains MCT’s and gives you essentially the same benefits as straight up MCT oil. So aside from giving your coffee a yummy, rich coconut-y flavour, coconut oil speeds up your metabolism and boosts the immune system. It also helps to slow absorption, so that you don’t get jitter-y from the caffeine. Again this is overly simplified information so I don’t get all scientific on you. You can purchase organic virgin coconut oil here.

Lastly, I love adding a ton of cinnamon to my bulletproof coffee. Not only does taste yummy and spicy, but you get the additional health benefits. Cinnamon is loaded with antioxidants, has anti-inflammatory properties, and is anti-bacterial. You can purchase organic cinnamon here.

3 JUICE RECIPES + JUICY BENEFITS

CE738886-D090-4CD6-8AF2-35A1C662AD19.jpg

Since I became plant-based three years ago, my taste buds have changed and evolved like crazy. I never used to crave fresh fruits and veggies, especially spinach or kale. Now I truly crave green juices and all things raw. While I’m not a raw vegan (I love pasta, pizza and tacos too much lol), I always feel amazing and energized when I get my nutrients from raw fruits and vegetables. Juicing is one of the the best ways to increase your intake of raw nutrients.

JUICING BENEFITS

I’ve had people ask me what the point is of juicing? Isn’t it a waste to use so many fruits and vegetables just to make a serving of juice?

Drinking fresh, organic juice is amazingly beneficial to your health because it floods your body with concentrated, instantly absorbable nutrients. Imagine trying to eat an apple, a whole cucumber, 8 stalks of celery, half of a lemon, and an entire bunch kale. It’d be a little difficult. But when you drink fresh juice, you are getting all those nutrients at once and it surges your body with vitamins and phytonutrients which boost your energy, detox your body, and promote glowing skin. Drinking juice is naturally healing to your body because gives your digestive system a break from breaking down food and allows your system to focus on repairing your cells (hence glowing skin as a result).

Sugar is a concern for people when they think about juice. First of all, it’s naturally occurring sugar, nothing added or artificial. Secondly, these juice recipes are made up of mainly vegetables, and one fruit as a sweetener. So chill. There are worse things you could be putting in your body—refined sugar, meat, dairy, eggs, processed food to name a few— Okay let’s get to the recipes!

Green glow

DETOXING

There are endless benefits to drinking your greens. This green juice is extremely hydrating and will work to rid your body of toxins. It also is rich in antioxidants which repair your cells and has the power to literally undo already existing cell damage. This juice is also rich in amino acids, which aids in weight loss.

Turn Up The Beet Juice

BLOOD, IRON, KIDNEYS

Beets are rich in nitrates, which boost blood flow, lower blood pressure and increase stamina. Beet juice also is powerful in detoxifying the liver, kidneys, and bladder. Beet juice is a great source of potassium and iron, which boost oxygen and hemoglobin levels in your blood. It is very beneficial for women to drink beet juice during menstruation because it increases circulation and keeps your iron levels from being depleted.

1 large beet

1 apple

5 carrots

2 inch piece fresh ginger

½ lemon

A Note About Organic Produce

When I juice, I buy all organic produce! Leafy greens, celery, carrots, and apples are part of the dirty dozen, which means they are heavy-laden with pesticides if you do not buy organic. You deserve the best for your precious body. So please please spend a few extra dollars and choose organic!

Practical juicing tips:

  • Wash everything thoroughly before juicing!

  • It’s not necessary to peel carrots, cucumbers, fresh ginger or apples. The only thing I peel when juicing is oranges. If your produce is organic, there’s no reason to take the peel off. I even throw in the entire lemon as is.

  • Always cut out apple seeds before juicing! Apple seeds contain toxic chemicals like arsenic. Obviously eating a couple seeds isn’t going to kill you. But I take the precaution because I don’t need that in my body.

  • Fresh, homemade juice loses its nutrients quickly. I would suggest drinking it within 30 minutes. Otherwise store it in a tightly sealed container in the fridge for up to 3 days. It will lose some of the nutrients but it’s still beneficial.

Please let me know if you have any other questions regarding juice! I’d love to hear from you!

Coconut Whisk Pancakes

Since becoming vegan, pancakes have been a true challenge for me. I used to love pancakes when going out for breakfast. I’ve always had a sweet tooth. I started making my own from scratch and they never turned out quite right. They were always too dense, or didn’t hold together, or just tasted terrible. I kind of gave up on pancakes and accepted that I’ll never be able to have the perfect pancake ever again (yes I’m dramatic). That is until I found Coconut Whisk!

Let me tell you about this AMAZING brand started by my friend, Bella. Coconut Whisk is a baking company based in Minnesota that makes vegan, gluten free, nut free, allergen friendly mixes! The pancakes are truly the best I’ve ever had. They are light and fluffy and have the perfect amount of sweetness. They are also SO simple to make. You just pour the contents of the packet into a bowl and add almond milk and vanilla extract. I topped mine with fresh fruit and real maple syrup.
